This bread is a real, spectacular, festive, salty delicacy, a specialty made with mozzarella and pesto. Make and serve a delicious holiday treat that's fun to make and eat. And our recipe video helps with professional execution. This recipe is also from the Ankarsrum recipe book.
Ingredients
6 grams of instant dry yeast
300 grams of wheat flour
195 grams of durum wheat flour
300 ml of water
50 ml of olive oil
2 teaspoons of salt

1 egg yolk
½ teaspoon of salt
2 tablespoons of olive oil
1 tablespoon pesto
sea salt
Bread that can be taken apart step by step:
To make dough, assemble your ANKARSRUM stand mixer eith the 7 liters stainless steel bowl, the spiral kneading hook and the kneading roller, as well as the scraper for the mixing bowl, which prevents the dough from sticking to the walls of the bowl.
Pour water into the bowl, and add the yeast, flour, olive oil and salt. Mix on medium speed until combined, then set the handle about 1-2 cm from the edge and knead the dough with your food processor for about 5-10 minutes.
Then put the lid on the bowl and let rise for 1 hour.
Cut the mozzarella into small pieces and dry it on a paper towel.
Now take the dough out of the bowl and divide it into 30 equal parts.
Take the first piece, shape it into a ball, then flatten it and spoon mozzarella and pesto into the middle. Fold the dough over the filling, shape it into a ball, making sure that the dough completely covers the mozzarella and pesto.
Repeat this with the other pieces of dough and place the balls in the shape of a Christmas tree. If you want, you can even shape the topmost ball into a star shape. Our recipe video will help you!
Now let the dough Christmas tree rise for 30 minutes.
Preheat the oven to 200 °C.
Mix the egg yolk and salt, then spread it on the bread.
Bake in the middle of the oven for 15-20 minutes until the edges are lightly browned.
