Gluten-free walnut gateau with fig crown and recipe video

Rich flavors, fabulous frosting, fresh figs: these are the main features of our recipe this week. Bake magic and enjoy flavors that will stay with you for a long time, and this video will help you make it!

Ingredients for the dough:

• 250 grams of walnuts

• 215 grams of butter at room temperature

• 180 grams (2 dl) of sugar

•2 eggs

• 80 grams (1½ dl) cornstarch

• 1 tsp baking powder

• ½ teaspoon of salt

Ingredients for the filling:

• 100 g of cream cheese

• 200 g cream

• 60 g (1 dl) powdered sugar

• 4 figs, fresh

• 20 g of walnuts

• 1 tablespoon honey, liquid

Gluten-free walnut gateau with fig crown - step by step:

1. Watch the recipe video by clicking here, then assemble your Ankarsrum stand mixer with the blender head.

2. Mix the walnuts into a crumbly flour, then mix with the potato flour, baking powder and salt.

3. Preheat the oven to 170 ℃.

4. Assemble the ANKARSRUM with the whisk and cream mixer accessory, which is part of the basic set.

5. Mix the room temperature butter with the sugar until foamy, then add 2 egg at a time and mix.

6. Now add the flour mixture and mix until smooth.

7. Pour the mixture into a buttered and floured, approx. into a cake tin with a diameter of 20 cm.

8. Bake the cake in the lower part of the oven for 20 minutes.

9. Let the dough cool completely.

10. Now reassemble the Ankarsrum machine with the whisk and cream mixer accessory.

11. Mix the cream, cream cheese, powdered sugar and vanilla with it.

12. Turn the cake upside down and spread the frosting evenly on the cake.

13. Decorate the top with figs, nuts and honey and serve.
