Transcarpathian fish soup
Ingredients
- 1 whole salmon (approx. 30-40 dkg)
- 6 potatoes
- 25 dkg frozen mixed vegetables (broccoli, cauliflower, carrots)
- 2 tomatoes
- 1 tsp red pepper
- salt and pepper to taste
- parsley and dill to taste
- 1 onion
- 3 cloves of garlic
- 1 tbsp oil
1. Dice the onion, then fry it in oil and add the red pepper. Then fill it with 2 liters of water!
2. Clean the fish, cut it into larger pieces and add all parts to the soup! Cut up the tomatoes too and put into the pot. Cook for 20-25 minutes! While the fish is cooking, peel and cut the potatoes! Then take out the fish and separate the meat from the bones. Be careful so that no bones gets into the soup!
3. Puree the soup with a Blender! Add the vegetables, then the chopped parsley and dill. When the vegetables are cooked in the soup, you can put the fish back in!
4. Add salt and pepper! Grate the garlic and add it to the soup at the end! Cover and let it rest for a few minutes - and the unusual, special Transcarpathian fish soup is ready!
Stuffed cabbage
Ingredients
- 150 g of fatty bacon
- 1 onion
- 5 cloves of garlic
- 100 g of smoked sausage
- 500 g minced pork
- 1 tbsp pork fat
- ½ tbsp tomato paste
- 2 tsp paprika
- salt, pepper
- 1 tsp ground cumin
- 2 bags of pre-cooked rice
- 300 ml of water
- 1 kg of chopped sauerkraut
- 400 g sour cream
1. Fry the bacon in a medium hot pan! Add the finely chopped red onion and the crushed garlic, and after a few minutes the sausage. Fry everything thoroughly, then let it cool!
2. Season the minced pork with the fat and concentrated tomatoes. You can also add paprika, salt, pepper and cumin. Mix in the rice and water, then the sausage-onion mixture.
3. Place a layer of washed sauerkraut in a baking dish; you can put half of the minced meat mixture on it; then another layer of cabbage; then the remaining meat, finally cabbage again and sour cream on top.
4. Put it in an oven preheated to 180 degrees for 30-40 minutes, and when the time is up, switch to the grill setting and toast the sour cream on top!

Greaves dough, blood sausage-apple salty christmas roll
Ingredients
For the dough:
- 2 dl milk
- 2 dkg of yeast
- 50 dkg flour
- 25 dkg of ground greaves
- 3 egg yolks
- salt
For the filling:
- blood sausage
- Apple
- grain mustard
1. Mix the ground greaves and flour by hand.
2. Warm up the milk, then stir in the yeast. Mix in the 3 egg yolks and add to the dough! Knead everything into a homogeneous mass! Leave the dough to rise in a warm place.
3. We peel off the skin from the blood sausage. Place the filling in a bowl and grate the apple into it. Then add a teaspoon of grain mustard and mix thoroughly.
4. Spread the filling evenly on the rolled out dough. Roll it up, brush it with egg, poke it with a fork and bake until crispy!
