Suncake-Bun with lemon and vanilla pastry cream

Let the sunshine into your kitchen and make Sun Cookies with lemon and vanilla pastry cream. This time, our recipe is from the ANKARSRUM recipe book.

Ingredients for 24 pieces:

Pasta:

500 ml of milk
150 grams of granulated sugar
50 grams of fresh yeast
2 tsp freshly ground cardamom
1 tsp salt
780-840 grams of wheat flour
150 grams of butter at room temperature

Cake cream:

250 ml of milk
½ vanilla pod
3 egg yolk
the peel of the lemon
75 grams of granulated sugar
2 tbs of cornstarch
25 grams of butter

On the top:

50 grams of butter
150 g granulated sugar

Suncake-Bun with lemon and vanilla pastry cream step by step:

Pasta:

1. Heat the milk to 37°C.
2. Assemble ANKA with the 7 liters stainless steel bowl, the kneading spiral hook and the kneading roller, as well as the scraper for the mixing bowl, which prevents the dough from sticking to the walls of the bowl. 3. Crumble the yeast into the bowl, and add the milk, then start the machine at low speed.
4. Pour the sugar, cardamom, salt, flour and butter into the bowl.
5. Set the timer for 10 minutes and knead the dough at medium speed. Now put the lid on and let the dough rise for 30 minutes.

Pastry cream:

1. Boil the milk with the vanilla pod, then let it cool for 15 minutes.
2. Mix the egg yolks, sugar, cornstarch and lemon peel. Gradually add the vanilla milk.
3. Heat the mixture over low-medium heat, stirring constantly. It should not start boiling.
4. Remove from the heat, remove the vanilla pod and add the butter. Strain the pastry cream and let it cool.

Pasta:

1. Divide the dough into 24 parts and shape them into smooth buns. Place them in a baking dish. Now let the buns rise. Then it's good if it doubles, that's approx. 30 minutes.
2. Preheat the oven to 225 °C.
3. Make a well in the buns and spoon the pastry cream into it.
4. Bake for 8-10 minutes in the middle of the oven.
5. When the buns have cooled down, melt the butter and sprinkle the sugar on top!
