Swedish flatbreads

The flatbread according to the Swedish bread recipe, it is a perfect delicacy for breakfast, brunch and afternoon tea, served with your favorite dressing, sauce or jam. Our recipe is also from the ANKARSRUM recipe book.

Ingredients:

50 grams of yeast

350 ml of milk

2 eggs

15 grams of sugar

5 grams of salt

600-650 grams of flour

125 grams of butter

On the top:

1 egg

2 tablespoon blue poppy

Flatbread step by step:

• Warm the milk and crumble it in, then stir in the yeast.

• Assemble the machine with the 7-liter stainless steel mixing bowl, the scraper for the metal mixing bowl, which prevents the dough from sticking to the walls of the bowl, and the kneading roller, which are part of the basic set. 

• Pour in the eggs, sugar, salt and most of the flour, then start the machine.

• Set the timer for 5-10 minutes and add the butter. Mix on low speed.

• Place the lid on the metal bowl and let rise for 30 minutes.

• When it has risen, place the dough on a floured board or surface and divide it into two parts. Stretch both approx. into 20 x 40 cm rectangles.

• Brush their tops with beaten egg and fold them three times.

• Cut out pieces about 4 cm wide and put them in the baking tray lined with baking paper.

• Cover and let to rise for 30 minutes.

• Preheat the oven to 225°C.

• Brush the top with egg and sprinkle with poppy seeds.

• Bake in the middle of the oven for 6-7 minutes and let it cool in the pan.

• Serve with the help of the ANKARSRUM confectionery set!
