All about chives

What is chives?

It is a popular and widespread herb throughout Europe, known and used for centuries. It grows even in the highest parts of the Alps, so it is no wonder that it plays an important role in the cuisines of the region.

 

It's a spice, and not just any!

What kind of food you use it for is up to you! A great choice for flavoring stews, soups, meats, sauces, but also egg dishes, salads, soft cheeses or sandwiches.

It goes particularly well with French, German and Austrian dishes. In Viennese cuisine, it plays perhaps the most prominent role: whether it is the chive sauce served with Tafelspitz (boiled beef) or even the decoration of beef soup. That is why it is not surprising that many people know it by its German name, Snidling.

 

Use it like this!

Fresh leaves must be torn or cut from the stem. It is important that it should only be harvested immediately before use, because it withers very quickly, which makes it bitter. If you want to store the cut leaves longer, you can chop them and freeze them or dry them.

Do not cook it, because it will lose its taste! Sprinkle the finished food with it only before serving. In addition to the leaves, the flower of the plant is also edible, a perfect pairing with egg and potato dishes. (We recommend it for grinding: herb grinder!)

 

It doesn't just taste good!

Of course, the taste is also delicious, but because of the many beneficial effects, chives are a real superfood. You can use it not only as a spice, but also as a medicinal herb: it has a great anticoagulant, antibacterial and stomach strengthening effect.

Chives are full of useful vitamins and minerals. In addition to vitamins A and C, it has a high iron, calcium, folic acid and sulfur content. It also contains small amounts of choline, which has a positive effect on mood, the nervous system and even memory.

It is a herb known in Hungary since the Middle Ages.

 

Fresh herbs in winter?
