All about spring rolls

What is the spring roll?
Spring rolls give us the richness and diversity of Asian cuisine. In southern China, for example, it is an indispensable part of festive occasions and family gatherings. They are traditionally filled with fresh, spring vegetables to welcome the new harvest and the season of fertility.
Many Asian countries have their own version of spring rolls adapted to local needs. In Vietnam, for example, it contains raw, fresh vegetables and often seafood, while in Thailand and Malaysia it is made with a sweet and sour sauce. Each version reflects the local flavor and the gastronomic traditions of the given country.
This versatility makes spring rolls really special.
How to make the perfect spring roll?
Selection of raw materials
The key to a perfect spring roll lies in the quality and freshness of the ingredients.
- Choose brightly colored vegetables such as lettuce, carrots, cucumbers, and don't forget fresh herbs such as coriander or mint, which make the taste experience truly unique.
- Seafood, such as shrimp, and thinly sliced meats, such as chicken or pork, are great sources of protein.
- The dough should be thin, but still durable: this way you will be able to wrap the filling nicely.
Filling: for perfection, it is essential to chop (with high-quality knives), grate (use a LOUIS TELLIER manual grater) and steam the vegetables in advance!
The art of rolling
- Start by moistening the dough to make it pliable and manageable.
- After that, place the filling evenly on one edge of the sheet (not too close to the edge).
- Fold in the sides, then roll up the roll tightly but carefully. The secret lies in tightness.
What makes a spring roll delicious?
The secret lies in the seasoning and dipping sauces. The flavoring can be simple or complex, the main thing is that it harmonizes with the filling.
- Some of the most popular flavoring ideas include using soy sauce, sesame oil, and fresh herbs.
- And feel free to experiment! Spring rolls are a great opportunity to try creative filling ideas!
Falls when making spring rolls
- One of the most common mistakes that many people make is over-soaking the roll sheets. If the sheets are too wet, they can easily tear during rolling. (Moisten the sheets with a damp kitchen towel, so you can avoid them being too wet!)
- On the other hand, if we don't wet them enough, they will remain too stiff, which also makes our work more difficult.
- It is also a mistake to try to put too much filling in the roll.
