Homemade ravioli with spinach and ricotta

Fresh homemade ravioli is always a guaranteed success at the lunch table. The incomparably delicious combination of homemade pasta and spinach-ricotta filling is easy to prepare. In this recipe, you will find how to make the perfect homemade ravioli, step by step.

Dough:

500 g durum wheat flour (finely ground semolina or pasta flour)

7 eggs

3.5 tablespoons cooking oil

Spinach ricotta filling:

100 g of fresh spinach

50 g of ricotta cheese

100 g finely grated parmesan cheese

1 clove of garlic

The peel of a lemon

Juice of a lemon

Salt and black pepper

 

1. Assemble your Ankarsrum stand mixer with the stainless steel bowl and kneading hook.

2. To make the dough, put the flour in the bowl, then start the machine at a low speed. Gradually add the eggs, then pour in the oil. When the dough is ready, set the handle 1 inch from the side of the bowl. Set the timer for 8 minutes and let the machine knead.

3. Then put the dough on a floured surface and knead for a short time. Cover and let rest in the refrigerator for at least 30 minutes.

4. Heat the olive oil in a pan over medium heat, then sauté the spinach until most of the liquid has evaporated. Remove from heat and mix with ricotta, chopped garlic, grated lemon peel and lemon juice. Mix until smooth with a hand mixer, then season to taste.

5. Assemble the pasta roller on your Ankarsrum stand mixer, then divide the dough into 3-4 parts. Roll out the dough at the lowest speed, setting the roller to 0. Fold the dough, then repeat this operation several times, gradually increasing the setting of the roller.

6. Place it on a lightly floured surface, then spread it with the spinach filling. Fold the other half of the dough over the filling. Cut out the ravioli pieces. 

7. Cook the ravioli in boiling salted water for about 5 minutes or until they float to the surface. Serve hot with grated Parmesan cheese and salad.
