Summer vegan recipes

Fresh fruits and vegetables

In hot summer weather, the digestive system works more slowly. Therefore, in the heat of the day, it is worth avoiding heavy meals and paying more attention to a healthy diet. This is how you can keep your energy level high even when others are just having fun. 

For example, it is recommended to eat as much fresh fruit as possible, because fruits hydrate and contain important vitamins and antioxidants, which contribute to the proper functioning of the immune system. And it is also advisable to include fresh vegetables in your meals: foods rich in fiber help maintain digestive health.

Most vegan meals are based specifically on fruits and vegetables. That's why it might be worth trying vegan recipes in the summer months, even if you don't otherwise follow a vegan diet! We have also brought you some vegan recipes that you should try sometime in the summer!

 

Fruit skewer

You can choose the ingredients as you like - we recommend that they include apples, pears and pineapples, and apricots are not to be missed! You will also need some lemon juice, ground cinnamon and coconut oil.

You can use a manual apple peeler, and a professional tool is also available for preparing pineapple. And if you also put citrus on the skewer, you will also need a professional electric citrus peeler! Cut the peeled fruits into cubes and put them on a skewer (you can find professional tools for this (here and here ) sprinkle them with cinnamon, drizzle a little coconut oil on them, then cover them with foil and bake them for just ten minutes!

Creamy watermelon soup

You will need 4-5 deciliters of coconut milk and 12-14 mint leaves (you can even produce it yourself, for example with the help of a smart garden ). You don't have to do anything other than core and dice the melon, puree it in a blender until smooth with coconut milk and a pinch of salt, then cool it down! 

 

Avocado-tomato pasta 

The heavenly taste that characterizes this dish is so captivating that there are actually no words for it..

You will need 50 dkg of durum spaghetti, 2 avocados, 1-2 cloves of garlic, 1 lemon, 4-5 tablespoons of olive oil and of course tomatoes, cherry tomatoes if possible.

Start by cooking the pasta! Set aside half a cup of the cooking water. Place the blender head on the existing stand mixer! Then crush the avocado and garlic and season everything with lemon juice, some oil, salt, pepper and possibly fresh parsley. Mix the mass until you get a creamy consistency, then add the cooking water! One more stir, and all that's left is to mix the pasta with the resulting sauce and serve with the tomatoes!
