Swedish meatballs with homemade fettuccine pasta

The Swedes are the masters of making meatballs. Our recipe for this week is a classic favorite: eating it will bring joy to the whole family! Our recipe is again from the ANKARSRUM recipe book.

Ingredients - fettuccine:

1 portion of homemade pasta, for the preparation of which you can read the exact recipe HERE. You can watch the durum version of the pasta in THIS ARTICLE, or in This video.

Freshly grated parmesan that you can make with THIS head part.

Ingredients - meatballs

500 grams of beef, grind it with the ANKARSRUM meat mincer attachment!

1 potato

50 grams of finely grated parmesan

50 grams Parma ham, chopped

1 pressed clove of garlic

half a finely chopped red onion

60 grams of breadcrumbs salt and pepper to taste

2 tablespoons of cream

butter for baking

Ingredients - tomato sauce:

6 peeled tomatoes

1 onion, chopped

1 tablespoon of butter

200 ml of water

50 ml of olive oil

1 tablespoon tomato puree

1 tablespoon of honey

Peel and juice of 1 lemon, for which we recommend THIS product

fresh basil

salt and pepper

Swedish meatballs with homemade fettuccine pasta, step by step

Fettuccine:

1. Turn your Ankarsrum stand mixer on its side and attach the lasagne pasta roller, this video will help you with this.

2. Divide the dough into smaller pieces. For the thinnest dough, use the dough rolling head first and make thin sheets of dough.

3. Start your ANKARSRUM machine at low speed, make the dough sheets through the fettuccine attachment, then place them on a floured surface. In this video we show you how.

4. Put them in hot water and cook for 2-3 minutes, or if you make more, dry them for later use.

Parmesan:

1. Turn the machine on its side and install the cheese grater head.

2. Start and grate parmesan cheese with THIS head part.

Meatballs and tomato sauce:

1. Turn the robot on its side again, install the meat mincer head part with the 4.5 mm mincer disc.

2. Cut the meat into thick pieces and grind on medium speed. In this video  you can see how easy it is to work with this meat mincer head part.

3. After grinding the meat, put half a raw onion, potato or a piece of carrot into the grinder so that all the meat comes out of the grinder

4. Mix the meat, Parma ham, Parmesan, garlic, onion and breadcrumbs into a homogeneous mass..

5. Add the cream.

6. Form meatballs, it's easier if you wet your hands, so the meat won't stick to it, then fry them in butter in a pan.

Tomato sauce:

1. Cut the tomatoes into large pieces and steam them with the onion in a pan.

2. Add the water, olive oil, tomato paste, honey and the rind and juice of a lemon.

3. Cook for 10 minutes, season with salt and pepper.

4. Puree the sauce, then pour the meatballs into the pan and steam them together for a few minutes.

5. Sprinkle chopped basil and fresh grated Parmesan on top.

6. Serve with homemade fettuccine pasta.
