This is going to be delicious!

If you're brave enough, you can even make an entire dinner using only pumpkin-based dishes.

In our compilation, we pay extra attention to collecting simple but varied dishes, so that we have the opportunity to experiment a little during their preparation.

And finally, we bring you a real exotic from this versatile ingredient, which I'm sure you haven't heard of!

 

Appetizer: Pumpkin cream soup with roasted pumpkin seeds

Spiced up with some roasted pumpkin seeds, you can turn this seemingly ordinary soup into a real culinary experience.

Ingredients:

  • 80 dkg pumpkin
  • 1 onion
  • 3 dkg salt
  • 5 dkg butter
  • 4 dkg flour
  • 5 dl milk
  • dill
  • 1 teaspoon of vinegar
  • 2 dl cream
  • ground white pepper
  • nutmeg
  • 1 dkg ground paprika
  • 10 dkg pumpkin seeds

Making:

  1. Clean and cut the pumpkin! Finely chop the onion and dill and steam them in the butter together with the pumpkin. Season with salt, vinegar, white pepper, nutmeg and paprika. Pour 5 dl of milk and 5 dl of water.
  2. Mix the cream and flour until there are no lumps. Pour into the soup and bring to a boil, then remove from the heat and puree with a stick blender.
  3. Roast the pumpkin seeds in a dry pan! Serve the soup with pumpkin seeds and a little cream!

 

Main course: Pumpkin pottage with meatballs

For the main course, we brought a real Hungarian classic, only with a little more exciting seasoning.

Ingredients for the pottage:

  • 1 onion
  • 4 tablespoons sunflower oil
  • 60 dkg planed pumpkin
  • salt
  • 1 tablespoon flour
  • 1 tablespoon ground red pepper
  • fresh dill
  • 1 small glass of sour cream

For the meatballs:

  • 50 dkg minced pork
  • 1 egg
  • 1 onion
  • 2 cloves of garlic
  • salt
  • freshly ground pepper

Making:

  1. Steam the onion in 2 tablespoons of hot oil! Add the pumpkin. Add salt to taste, add a little water and simmer covered.
  2. Meanwhile, in a small pan, fry the flour in the remaining oil until golden brown, stirring constantly. Remove from the heat, sprinkle in the red pepper and mix until smooth.
  3. Once the pumpkin has softened, mix in this flour-paprika mix, finely chopped dill and sour cream. Bring to a boil and after a few minutes of cooking, remove from heat.
  4. Knead the minced meat thoroughly for the meatballs, then add the beaten egg, softened onion and crushed garlic. Add salt, pepper and red pepper. Mix and add a little flour if necessary.
  5. Form balls roughly the size of ping-pong balls from the mixture, then roll them in the flour. Finally, fry in hot oil until golden brown!

 

Dessert: Pumpkin pie

Pie is a true classic among desserts. Pumpkin pie is a particularly intense experience that pampers the olfactory organs and taste buds.

Ingredients:

  • 20 dkg spelled wheat flour
  • 10 dkg butter
  • 2 dkg sugar
  • 6 gramm baking soda
  • 2 eggs
  • salt
  • 40 dkg roasted pumpkin
  • 8 dkg honey
  • 1 teaspoon of ground cinnamon
  • half a teaspoon of ground nutmeg
  • half a teaspoon of ground cloves
  • half a teaspoon of ground ginger

Making:

  1. Preheat the oven to 180 degrees. Knead dough from flour, baking soda, melted butter, sugar, 1 egg and 1 pinch of salt!
  2. Roll out the dough and line the bottom of the pie pan with it! Bake at 180 degrees for 10 minutes, then remove from the oven. In the meantime, you can also mash the roasted pumpkin.
  3. Mix the pumpkin pulp, an egg, honey and spices. Pour the resulting filling into the center of the pre-baked pie dough and spread it evenly. Put it back in the oven, it will be ready in another 20-25 minutes at 180 degrees. Serve with mascarpone cream and a little cinnamon!

 

An unusual recipe: Baked pumpkin with rosemary and cheese

This recipe may seem strange at first, but its exotic flavor will convince you that it is worth making.

Ingredients:

  • 50 dkg pumpkin
  • 2 tablespoon of rosemary
  • 1 teaspoon of salt
  • 2 teaspoon of crushed pink pepper
  • 5 dkg edami
  • 5 dl milk
  • 5 dkg Parmesan
  • 5 dl cream

Making: 

  1. Peel the pumpkin and remove the seeds. Cut the pumpkin into slices no more than 2 cm thick.
  2. Put the slices in a baking tray. Season the vegetables with salt, then crush 2 teaspoons of pink pepper in a mortar and sprinkle over the pumpkin.
  3. In the last step, sprinkle the top with fresh rosemary leaves!
  4. Grate some cheese on the pumpkin and pour milk or cream over it. Cover the whole thing with aluminum foil and put it in the oven. After 30 minutes, remove the aluminum foil and bake for another 5 minutes. It is best served fresh and warm.
