When marinating, it is recommended to use heat-resistant oil, mix the spices in it. It is worth marinating the meat a day before baking. Marinades usually consist of oil, acid and spices. The role of acidic lemon or vinegar is to tenderize the meat. Many people prefer yogurt marinades instead of citrus ones, the advantage of this is that it does not dry out the meat, but it still makes the meat pleasantly tender. 

In addition to salt and pepper, herbs can also be used for pickling. For Greek marinade, for example, citrus fruits, especially lime or lemon juice, with thyme, oregano, and bay leaves.
Meat marinades made with coriander, garlic, caraway seeds and lime have a slightly more piquant taste. You can also use this delicious, juicy marinade for fish and chicken, perhaps with a little chili. 

Heavier meats, such as thicker beef steaks, should be coated with mustard first, the spices will stick to it, while the slightly acidic Dijon mustard also takes over the role of the marinade. Rosemary, garlic, lemon juice and the indispensable salt and pepper go well with it.

Barbeque versus grilling

In Hungarian culture, the concepts of barbeque and grilling are completely intertwined. After all, outdoor grilling does not have such a deep tradition as, for example, in the southern states of the USA, where the bbq culture originates. Because there is quite a big difference between the two methods. The essence of grilling is to suddenly fry meat or vegetables at a high temperature.
