Mascarpone apple cake

Your spectacular cake warms up the cooler days, but at the same time, its flavor already enchants you with winter scents. The filling will now be apples, but if it's not in season, feel free to replace it with berries. The pairing of apples and cinnamon in the perfectly textured dough made with Ankarsrum is a true classic, but the adaptability of the recipe allows us to experiment with seasonal berries as well. The end result is a harmoniously flavored, fragrant dessert, each slice of which evokes the atmosphere of the winter holidays.
Our recipe is from the Ankarsrum recipe book.
Ingredients for 12-14 slices:
150 g room temperature butter
180 g of sugar
3 eggs
180 g of flour
1 ½ teaspoons baking powder
1 pinch of salt
1 tablespoon of cinnamon
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
50 ml of milk
2 tablespoons of butter
45 g of sugar
For the filling:
5 red apples
45 g of sugar
2 tablespoons of cinnamon
1 tablespoon of vanilla sugar
2 teaspoons ground cardamom
For the mascarpone cream:
250 g of mascarpone
200 ml of cream
60 g powdered sugar
juice of half a lemon
For decoration:
65 g of chopped hazelnuts
3 tablespoons of maple syrup
Apple mascarpone cake step by step:
• Cut the apple into thin slices, peel it, place it in a bowl and sprinkle it with sugar, cinnamon, vanilla sugar and cardamom. Mix and let the apple rest for a while in this spice bath.
• Grease the base of three small (12-15 cm) or one large cake or pie pan, or a circular baking sheet with butter, then set the oven to 175°C.
• Assemble the ANKARSRUM with the whisk and cream mixer accessory, which is part of the basic set.
• Mix the room temperature butter with the sugar until white, then add the egg and mix thoroughly.
• Mix the flour with the baking powder and all the spices in a separate bowl. Gently add the flour mixture to the egg-sugar mass. Add the milk and mix it into a smooth dough.
• Divide the dough onto the small cake plates and press the apple slices into them in any pattern you like. Sprinkle with chopped hazelnuts and bake in the middle of the oven for 35-40 minutes. Let it cool completely, this will be the dough for the cake.
• Take out the machine with the whisk again.
• Mix all the ingredients into the mascarpone cream, the texture should be creamy, not hard. Add lemon juice to make it sour or sweeter to taste.
• Place a dough base on a plate and spread 1/3 of the mascarpone cream on it, sprinkle with hazelnuts and drizzle with a little maple syrup. Repeat with the remaining bases, sprinkle some more hazelnuts on top and drizzle with maple syrup.

If the butter is not at room temperature, grate it or cut it into smaller pieces, so it will heat up faster.
