Saffron star bread with recipe video

The saffron star bread is a real festive treat, which is made really special by the chocolate peanut butter. Make and serve a delicious holiday treat, the success of which is also helped by our recipe video. Our recipe is from the Ankarsrum recipe book.
Ingredients
Saffron dough:
1 gram of saffron
75 grams of butter at room temperature
25 grams of fresh yeast / 6 grams of instant dry yeast
300 ml of milk
90 grams of sugar
300-420 grams of wheat flour
½ teaspoon of salt
Filling
100 grams of chocolate peanut butter
Syrup:
50 ml of water
50 grams of sugar
For decoration:
Powdered sugar

Assemble your ANKARSRUM stand mixer with the 7 liters stainless steel bowl, the spiral kneading hook and the kneading roller, as well as the scraper for the mixing bowl, which prevents the dough from sticking to the walls of the bowl.
Pour the milk and yeast into the bowl and mix on medium speed. Add the butter, sugar, flour, saffron and milk. Mix on medium speed. Place the handle about 1-2 cm from the edge and knead the dough for about 5-10 minutes.
Now put a lid on the bowl and let the dough rise for about 45 minutes.
Combine the water and sugar in a small saucepan and cook over a medium heat until the sugar dissolves, then set aside.
Remove the lid of the bowl and divide the risen dough into 3 equal parts.
Roll out the first batch of dough to approx. For a 30 cm round shape. Spread half of the chocolate peanut butter on the dough. Roll out a second circle and place it on top of the first. Now spread the remaining chocolate peanut butter on top. Stretch out the third circle and place it on top. If you need to shape them, we recommend using the lid of the bowl as a kind of template.
Draw a circle with a diameter of 10-15 cm in the middle of the dough circles, then cut out 16 equal strips starting from the edge of the small circle in the middle, all the way to the edge of the large dough circle. Cover and leave to rise for 45 minutes.
Heat the oven to 200 °C.
Bake in the center of the oven for 15-20 minutes until the edges are lightly browned, then immediately brush with the syrup.

Allow to cool completely before decorating with powdered sugar and serve with the help of the Ankarsrum confectioner's set!
