When we think of sous vide technology, we usually think of meat, soft, crumbly beef or pork. Although this great technique lends itself to meat, it also works just as well with vegetables. That's why after roasting the chicken and duck, this time we also thought about vegetarians and searched among vegetable-based recipes to see what slow cooking adds to the vegetable ingredients.
For this, we needed a vacuum sealer so that the vegetables could be cooked in their own juice without losing their juice. By the way, the recipe was a fresh, brussels sprout-based ham delicacy. To do this, after washing the Brussels sprouts, we placed them in the bag together with a little butter, salt and pepper, then vacuumed out the air and sealed it. Then, the package was placed in the container prepared for sous vide process, and the sous vide machine was set to 85 degrees for 50 minutes.
Meanwhile, I started to prepare the other ingredients. I slice the ham - the recipe recommends Italian ham, I used chicken breast ham instead, but that's a matter of personal taste - then I fried it in olive oil. As the meat began to brown, the Brussels sprouts were also ready, at which point I took the vegetables out of the pot, opened the bag, and drained the hot juice, then set the Brussels sprouts aside for 1-2 minutes. Then I toasted them in the pan until they were nicely browned. In the meantime, I also sprinkled the Brussels sprouts with balsamic vinegar.
At the end of the process, there was nothing left but to serve: I took out the Brussels sprouts in a deeper bowl, making sure that there was also ham on top. The result? Perfectly cooked, tasty and juicy vegetable! (It is important to note that the taste of Brussels sprouts is quite strong, for those who do not like it, we recommend other types of vegetable recipes).
