Ice cream sandwich, that is waffle with ice cream

Eat good with good and it will be even better! Take your frozen dessert science to a new level and combine ice cream with waffles. What will happen? You have to try it, because the orgy of taste is indescribable, you have to feel it!

Ingredients for the ice cream:

4 egg yolks

100 gramm sugar

100 gramm cream

200 gramm milk, 3%

½ teaspoon vanilla flavoring or the inside of 1 vanilla bean

50 gramm raspberry jam

chopped pistachios on top (optional)

Ingredients for 4 waffles: 

120 gramm flour

1 tk baking powder

1 egg

200 ml milk

50 gramm melted butter

Ice cream sandwich, that is waffle with ice cream step by step:

Ice cream:

Place the Ankarsrum ice cream maker in the freezer for at least 20 hours.

Assemble your ANKARSUM stand mixer with the 3.5 liter plastic bowl and the double whisk attachment, which are part of the starter kit, as shown in this video

Beat the egg yolks and sugar at medium speed for a few minutes until foamy.

Add the vanilla, milk and cream and mix. Now put it in the fridge for 20 minutes until the dough cools down completely.

Assemble your Ankarsrum stand mixer with the ice cream maker. Pour the ice cream mixture through the opening in the lid. Let the machine work at medium speed for 25-30 minutes, then pour the mass into the mold and mix it with the raspberry jam. 

Put it in the freezer for at least 6 hours.

Waffles

Assemble your ANKARSUM stand mixer with the 3.5 liter plastic bowl and the double whisk attachment, which are part of the starter kit, as shown in this video

Mix the flour and baking powder in the bowl, then add the egg and milk. Mix on medium speed, then add the butter.

Heat up the waffle maker, grease its baking surface with a little butter, and dip the waffle batter into it. 

Once baked, let it cool completely, preferably on a wire rack. 

Cut the waffle into 4 parts, then take the ice cream out of the freezer. Put ice cream between each waffle slice, spread the ice cream on the dough in an even layer. Sprinkle chopped pistachios on top and serve immediately or put back in the freezer until ready to serve.
