Tomatoes can be used to make a wide variety of juices, sauces, and preserves, and there are plenty of recipes online. However, there is less information about the tools needed to process tomatoes, which make preparation and processing child's play these days. 

Tomato sqzeezing

There are many ways to extract tomato juice, the easiest is to press it through a sieve to separate the skin and seeds from the valuable tomato juice. You can use a plain sieve or a tightly woven textile bag for this, but you definitely have to cook the tomatoes for this, and to be honest, this will be quite a pain if you are making more than a few kilos. Restaurants often use professional manual food squeezer which are good for juicing fish soup and fruit and vegetable juice, but we only recommend this for smaller quantities.
 
If you want to process more than 5-6 kilos of tomatoes, it is definitely worth investing in at least an original Italian manual tomato squeezerba. This can even juice raw tomatoes, with the seeds and skin coming out at the front of the device, and the fiber-rich tomato juice flowing out after filtering through the sieve. 
 
[A little digression: when is it worth cooking tomatoes that you want to store? We recommend cooking them only if absolutely necessary for preservation. If you want to preserve the vitamin content and nutritional content of raw tomatoes, then squeeze them raw and consume the tomato juice as soon as possible. Tomato juice can also be vacuum-packed using a simple vacuum sealer and it will last a very long time in the freezer.]
 
It's tiring to squeeze more than 30-40 kilos of tomatoes - especially if they're raw - by hand, and why work unnecessarily if we can mechanize the process anyway? Nowadays, you can buy various electric squeezer at very reasonable prices, among which we would especially highlight this Tre Spade tomato squeezers. 
 
 
 
The Tre Spade electric tomato squeezer already has a special sieve, ideal for juicing tomatoes (meat grinder head is available as an option). Due to the higher speed and the much larger sieve, it can juicing up to 450 kilos of tomatoes in an hour! Making sun-dried tomatoes

 
There's nothing better than taking out a jar full of juicy sun-dried tomatoes in the winter and snacking on them! However, to do this, we need to take care of the sun-dried tomatoes now, which we can dry on a tray or on a rack, either in the sun or with the help of a dehydrator.
 
 
 
Instead of the cheap dehydrators available in supermarkets (which practically just blow warm air from one tray to the next from the bottom up), we recommend the so-called horizontal dehydrators for home use. Tre Spade dehydrators are one of them, their design is such that the warm air moves horizontally between the trays, thus quickly and effectively removing moisture from each tray.
 
There are two types of these machines, the burgundy ATACAMA PRO dehydrator with 6 trays, and the ATACAMA PRO DELUXE dehydrator, also with 6 trays. These devices allow you to prepare dried fruits in a very short time (they were mentioned because of tomatoes, but of course any fruit, vegetable, or even meat can be dried with them). The capacity of the latter model can also be doubled with this expansion box.

Kitchens and production companies that dry tomatoes in large quantities naturally use drying cabinets with much larger drying surfaces, such as the GAMMO drying cabinet, which dries on 11 huge shelves and almost four square meters of drying surface at the same time. Of course, they no longer slice the tomatoes by hand, but use a SAMMIC vegetable slicing machine with a tomato slicing disc.
 
Returning to drying, before drying, we clean the tomatoes and cut them into slices about 5 mm thick with a knife or, in case of larger quantities, with a tomato slicer. We place the slices on the trays and start one of the drying programs, we recommend a temperature of around 40-45 degrees, with such settings in the ATACAMA PRO dryer, dried tomatoes are made in about 18 hours from about 2-3 kg of fresh tomatoes.
 
 
Store the sun-dried tomatoes in olive oil, without spices, in an airtight container, and only season to taste when ready to use.
